Recipe for Takuan- A Quick Pickled Daikon


Just thought I’d share a pic of my takuan- a quick pickled daikon from my New Year’s Eve sushi fest….??
Super easy to make and sooo crunchy and delicious, it’s hard not to eat the whole jar before rollin’ it up with rice!
Wanna try yourself at home?
1 small daikon radish.
1 tbsp salt
1/2 cup rice vinegar.
1/2 cup water.
1/2 cup white sugar.
-peel daikon and cut into thin rounds or strips.
-sprinkle with salt and let sit for 2 hours to pull out moisture.
-dry daikon with paper towel, squeezing out excess moisture and place in mason jar.
-combine sugar, rice vinegar, and water in a small saucepan and bring to boil, stirring to dissolve sugar.
-pour brine over radish in jar and allow 2 days in the refrigerator to pickle.
That’s it! You can add a touch of tumeric for an authentic yellow colour, and a few slices of ginger for a bit of extra zing if that’s your thing!
